Mix the Wet Ingredients

  • Take a separate medium bowl, add 2 cups buttermilk, 2 large eggs, the cooled melted butter, and 1 teaspoon vanilla extract.
  • Whisk everything together until the eggs are fully blended and the mixture looks smooth and evenly combined. The buttermilk may still look slightly thick, which is perfectly normal.

Bring the Batter Together

  • Pour the wet ingredients into the bowl with the dry ingredients.
  • Now, gently stir everything together using a whisk for 20–30 seconds until large patches of dry flour are no longer visible.
  • Not to overmix. Too much stirring can develop the gluten in the flour and leave your pancakes dense.
  • Let the batter sit for about 5 minutes so the flour can absorb the buttermilk.

Heat Your Griddle

  • Place a large nonstick skillet over medium heat and let it preheat for about 2–3 minutes.
  • Add a small amount of butter and spread it over the cooking surface with a spatula.

Cook the Pancakes

  • Scoop about ¼ cup of pancake batter onto the hot, lightly greased griddle for each pancake. Leave about 2 inches of space between the pancakes so you have enough room to flip them easily.
  • Let the pancakes cook without moving or pressing them for about 2–3 minutes. Keep the heat at medium, but lower it slightly if the bottoms are browning too quickly.

  • Cook the second side for about 1–2 minutes, until it is golden brown and the center feels set.
  • Transfer each finished pancake to a plate or wire rack as you cook the remaining batter.

  • Serve the pancakes while they’re still warm. Add a small pat of butter to the top and drizzle generously with maple syrup.

I prefer from-scratch version because I love the texture it gives these pancakes, but you can still get a good, fluffy stack with these twaeks.

No butter milk

For a quick substitute, mix 1 tablespoon of lemon juice or white vinegar with each cup of milk. Give it about 5 minutes to sit, then use it just like buttermilk in the recipe. Make sure your milk is not ice cold when you mix everything together.

Cornmeal instead of flour 

You can also add fine cornmeal to the batter by replacing about ½ cup of the flour. I prefer keeping some all-purpose flour in the mix because it helps keep the pancakes light and tender. If your cornmeal is coarse, give it a quick pulse in a blender or food processor first for a finer texture.

The batter doesn’t need to be perfectly smooth. I actually prefer seeing a few little lumps because I know I’ve stopped mixing before the batter gets overworked.
